Melitzanosalata


1. Wash the eggplants, prick them with a fork and squeeze them out.

2. Bake them in a hot oven until they're soft.

3. Remove seeds and peel of the eggplant and puree it.

4. Mix with the onion, the pepper and the mayonnaise.

5. Serve chilled.
