1. In a large skillet, heat the olive oil over medium heat. 2. Add the onion and celery and cook until soft. 3. Stir in the tomatoes, capers, bay leaf, and parsley and simmer, covered, for 3 to 4 minutes. 4. Add the cod, cover, and cook over low heat for about 8 minutes, or until the fish flakes easily with a fork. 5. Add salt to taste and serve. 6.
