1. In a large saucepan cook celery, onion, carrot, red pepper, parsley, green pepper, and garlic in hot oil till vegetables are tender, but not brown. 2. In a large mixing bowl combine the eggs, bread crumbs, the 3/4 cup salsa, chili powder, cumin, nutmeg, salt, and black pepper. 3. Add ground beef and ground turkey. Mix well. 4. Place in a 9 x5x3-inch loaf pan. 5. Bake in a 350 degree oven for 1 1/4 to 1 1/2 hours or till no pink remains. 6. Remove meat loaf from oven and let stand 10 minutes before serving. 7. Invert meat loaf and remove from pan. Slice to serve. Top individual servings with salsa, if desired. ---------------------------------------------------------------------------
