Mexican Bean Soup


1. Heat oil, sweat onions and garlic.

2. Add carrots, celery and chilli flakes and cook until tender.

3. Add tomatoes, vegetable stock, capsicums, beans and coriander.

4. Bring to boil, then simmer for 30 minutes.

5. Add brown sugar.

6. Season with salt and pepper and chipotle – to give the soup a smokey flavour.

7. Garnish with sour cream and chopped coriander.
