Mexican Chicken Low-Fat Packet Meal


1. Preheat oven to 450 degrees or grill to medium-high.

2. Place each chicken breast half in a foil packet.

3. Spoon salsa over chicken; top with beans.

4. Double fold end of foil, leaving room for heat to circulate inside.

5. Repeat with other packet.

6. Bake 15 to 18 minutes on a cookie sheet in oven or on a covered grill for 11 to 13 minutes.

7. Remove from packet and sprinkle top of chicken with cheese.

8. Serve with tortilla chips, if desired.
