Mexican Chicken Pasta Toss


1. Put pot of water on to boil for pasta.

2. Heat oil in skillet on medium-high heat. Add onion and garlic and cook until tender.

3. Add chicken, medium high, cooked until no pink remains.

4. Add all remaining ingredients. Bring to boil, then turn down to simmer, 15 minutes.

5. Cook pasta until tender, then drain. Add chicken and sauce to pasta and toss.

6. Sprinkle top with shredded Mexican-blend cheese, if desired.
