1. In a large pot, add everything but the rice, avocado and limes, cook on high heat, bring to a boil for 30 minutes. 2. Turn heat down to low and simmer, add rice and stir as little as possible until you are ready to eat. 3. Add avocado chunks into soup and stir once. 4. When ready to eat serve soup with juiced lime wedges, the juice adds a very nice flavor to the soup. ---------------------------------------------------------------------------
