1. Heat oil in dutch oven or large soup pot over medium heat. 2. Add onion and carrot; cook and stir 3 to 4 minutes. 3. Add water, salsa and lentils. Bring to a boil. 4. Reduce heat, simmer 30 to 40 minutes or until letils are tender. 5. Serve by placing in a bowl and topping with a dollop of sour cream, sliced black olives, chopped green onions or corn chips.
