Mincemeat Cake


1. Preheat oven to 325°F Line a 9-inch round cake pan with parchment paper and butter the paper.

2. Sift together the flour, baking powder, baking soda and salt. Set aside.

3. Cream together the butter and sugars in a large bowl. Whisk in egg until well blended.

4. Mix the dry ingredients, a little at a time, into the butter mixture, making sure each addition is fully incorporated before adding more.

5. Stir in the mincemeat and walnuts, until evenly distributed.

6. Spread batter into prepared pan and bake about 1 hour, or until knife inserted in center comes out clean. Cool slightly in pan on wire rack.

7. Serve warm, with vanilla ice cream or a custard sauce, or plain like a snack cake.
