1. Slice Onions and Peppers. Place into a slowcooker. 2. Rinse roast. Rub roast with salt and pepper. Brown all sides of the roast in a heavy skillet. 3. Place roast into slow cooker. Add chicken broth, mole sauce and water. Slow cook for 6 - 8 hours, until meat thermometer reads 170 degrees. 4. Remove roast from cooker and allow to set for 30 minutes before slicing.
