Moms Cinnamon Chocolate Italian Cheesecake


1. oven at 350. in a large bowl beat eggs until foamy. add sugar a little at a time beating well after each addition. reduce speed and beat in ricotta 1/2 cup at a time. sprinkle in cinnamon and chocolate and mix well. pour into an ungreased spring pan. place pan in a large pan and fill it until there is one inch of water. bake 1 1/2 hours or until knife inserted in center comes out clean. cool on rack for 3 hours. then run knife around edge to remove from pan.

2. chill 2 to 3 more hours.
