1. Place chicken, onions, capsicum, carrots, potatoes, tomatoes, sultanas and all seasonings. 2. Add enough water or stock to just cover ingredients. 3. Bring to the boil, reduce heat and simmer 40 mins. 4. Add chickpeas and zucchini and cook a further 20 minutes. 5. Stir in green peas then turn off heat. 6. Cook couscous by boiling 2 cups water, then add couscous, cover and let stand 5 minutes. 7.
