1. Heat the oil in a 6-quart pressure cooker over medium-high heat. 2. Add in the onion; stir/saute for 2 minutes. 3. Add in the sausage; stir/saute for 2 minutes (stir to crumble). 4. Add in eggplant and next 9 ingredients; stir to combine. 5. Close lid securely; bring to high pressure over high heat. 6. Adjust heat to medium or level needed to maintain high pressure; cook for 4 minutes. 7. Remove cooker from heat and place under cold running water. 8. Remove lid and stir in raisins and thyme. 9.
