Moroccan Vegetarian Stew


1. Heat oil in a large saucepan over medium heat.

2. Add onion and garlic. Cook, stirring occasionally, 3 minutes.

3. Add carrots, bell pepper, spices, and 1/4 cup of the water.

4. Cook, stirring occasionally, 5 minutes.

5. Add all remaining ingredients.

6. Cover and simmer over medium low heat, 30 minutes or until vegetables are tender.

7. Stir several times during cooking.

8. Serve over couscous, rice or any cooked grain.
