1. Heat olive oil over medium low heat and sauté onion until soft and just starting to caramelize. Add garlic and cook, stirring constantly, for 2 more minutes. 2. Add meat and stir to break up slightly - no need to cook through. 3. Add remaining ingredients and stir constantly for 5 minutes to break up the meat more thoroughly. 4. Cook over low heat for 4-6 hours stirring every 15 minutes the first hour and then once or twice an hour after that. 5. Add additional salt to taste - I have also added extra dried Italian herbs, garlic and onion powder to punch up those flavors. ---------------------------------------------------------------------------
