1. Preheat oven to 350. 2. Grease a 9 by 13 dish with about 1 tablespoon oil. 3. Slice potatoes, you will want 6-8 cups. 4. Place 1/3 of the potatoes into the dish. 5. Drain the tomatoes and sprinkle 1/3 of the can over the potatoes. 6. Drizzle about 2 tablespoons oil over the potatoes and tomatoes. 7. Mix together the cheese, garlic, basil, parsley, oregano, salt, and pepper. 8. Sprinkle 1/3 of the cheese mixture over the potatoes, tomatoes, and oil. 9. Repeat layers twice. 10.
