1. Let meat stand at room temperature for at least one hour. 2. Preheat oven to 190c (375F) degrees. 3. Rub meat with seasoning and place fat side up in shallow pan. 4. Do NOT cover or add water. 5. Bake 1 hour, turn off heat. 6. DO NOT OPEN OVEN! 7. Turn oven back on to 190 deg C (375 deg F), 45-55 minutes before you plan to serve and bake for 30-40 minutes. 8.
