1. Cream butter and sugar. Preheat oven to 350°F. 2. Stir in yolks one at a time then add lemon peel and vanilla; stir to combine. 3. Next add 3 cups flour and the baking powder and stir well. If needed, add 1/2 cup flour to stiffen dough. 4. Press all-except 1 cup-of dough into a cookie sheet and spread with your choice of jam. We've traditionally used raspberry, strawberry or plum. 5. Roll out remaining cup of dough on a floured surface and cut into strip's. Lay strip's in a criss-cross pattern on top of jam. 6.
