1. Heat the oil in a large (preferably non-stick) pan and lightly sauté the garlic and onion for 2-3 minutes, until it has softened but not browned. 2. Add the eggplants, mushrooms, tomatoes, zucchini, sugar, tamari, parsley and oregano, and cook, stirring occasionally for 6-8 minutes or until the vegetables are just cooked. 3. Cook the pasta in plenty of boiling water for 10-15 minutes, drain well, and pile the pasta into a serving dish and spoon the sauce over the top. 4. Notes: Tamari is a pure form of soy sauce, free of chemicals and preservatives.
