Nuoc Cham (Vietnamese Dipping Sauce)


1. Mash the garlic, surgar and red pepper flackes into a grainy paste on a small plate with the back of a fork.

2. Scape the paste into a small heat-prooof serving bowl.

3. Pour hot water over the mixture to dissolve the sugar.

4. Let it cool slightly, then stir in the lime juice and fish sauce.
