1. Preheat oven to 375°. 2. Place all ingredients in a large bow, mix well. 3. Spray a cookie sheet with nonstick spray. 4. Drop 1 tablespoon full of batter, 2 inches apart on cookie sheet. 5. Dampen fingers lightly with cold water and press batter to flatten into 2 inch rounds. 6. Bake until cookies are light golden, but not brown, about 12 to 14 minutes. 7. Cool on pan for 3 minutes, then transfer to a wire rack to cool completely. 8. Store in an airtight container. ---------------------------------------------------------------------------
