1. pre-heat oven to 190 degrees Celsius. 2. grease a 20cm round cake tin and line base with baking paper. 3. melt butter and syrup in a small saucepan. 4. pour melted ingredients into a small bowl. 5. add egg and sugar, beat well. 6. sift cocoa, flour and BAKING POWDER together. 7. fold sifted ingredients and essence into egg mixture. 8. dissolve baking soda in milk. 9. fold into egg mixture. 10. pour mixture into prepared pan and bake for 30 minutes or until cake springs back when lightly touched. 11. leave in tin 5 minutes before turning out onto wire rack. 12. when cold ice with chocolate icing. 13. Chocolate Icing: 14. sift icing sugar and cocoa in a bowl, add butter, add sufficient water to mix to a spreadable consistency, flavour with essence. ---------------------------------------------------------------------------
