Ostkaka (Swedish Cheesecake)


1. Preheat oven to 425°F.

2. Whip the eggs until fluffy.

3. Stir in sugar, flour, and cottage cheese.

4. Fold in the almonds and amaretto.

5. Butter or spray a 9" x 13" casserole.

6. Pour into pan. Bake for 1 hour.

7. If cheesecake starts to get too brown, cover with foil.

8. Best served warm with fruit compote.
