1. Pre-heat oven to 350 degrees. 2. Lightly grease a 3 quart casserole. 3. Add cornmeal, water, milk, olive oil, salt, red pepper and mix until blended. 4. Bake corn mixture uncovered for 40-45 minutes. Don't worry if the mixture doesn't look blended. It starts to get firm in the last 25 to 30 minutes. 5. Stir the polenta and bake for another 10-15 minutes more. 6. Remove polenta from oven and stir in cheese. Serve within 5-6 minutes from removing it from the oven. ---------------------------------------------------------------------------
