1. Saute onion, cinnamon, cardamom, and ginger in 1 tablespoon oil until onion is soft. Then add garlic and chopped tomatoes, reduce heat and simmer for 2 minutes. 2. Add coriander, garam masala, paprika, and salt, and spinach, cover and simmer on low heat for approximately 10 minutes. 3. Add tofu cubes and simmer for another 20 minutes. 4.
