1. Sprinkle salt in a large cast iron frypan over medium high heat. 2. Add steaks, Sear/saute for 2 minutes on each side. 3. Remove from pan. 4. Add garlic, saute 10 seconds. 5. Add Sherry, cook for 30 seconds, scraping pan to loosen browned bits. 6. Return steaks to pan, cook 2 minutes. 7. Add the soy sauce and 1/4 teaspoon black pepper. 8. Place steaks on individual plates. 9. Remove pan from heat, and stir in butter and ginger until blended. 10.
