1. In a large saucepan, bring the coconut milk to a boil over high heat, stirring occasionaly. 2. Reduce heat to low & simmer, uncovered for 15 minutes, stirring occasionally. 3. Add remaining ingredients & stir. Cover & simmer over a medium heat, stirring occasionally for 1 1/2 - 2 hours or until the beef is tender. 4. Serve hot over rice.
