1. Mix the 1/2 cup sugar with the lemon peel, set aside. 2. Mix flour, salt, and remaining sugar. 3. Beat eggs, milk and butter; stir into dry ingredients. 4. Pour batter by 1/3 cupfulls on lightly greased hot griddle. 5. Cook on each side until light brown. 6. Sprinkle with reserved sugar mixture. 7. Roll up and keep warm. 8.
