1. In medium pot, bring 2 qts water and 1 t salt to a boil. 2. Cut a ring around the middle of each potato. 3. Drop potatoes in boiling water, bring back to the boil. 4. Reduce heat to simmer and cook until potatoes are tender, about 10 minutes, depending on size of potatoes. 5. Drain well. 6. Add butter and parsley. 7.
