1. In pot over high heat combine potatoes and parsnips with enough water to cover; boil. 2. Reduce heat to medium and simmer 25-30 minutes and then drain. 3. In same pot melt butter over low heat; add scallions and garlic; cook until softened- about 4 minutes. 4. Return potatoes and parsnips to pot; remove from heat. 5. Add next 4 ingredients; mash. 6. Transfer to bowl; dot with additional butter if desired. 7. Sprinkle with parsley. ---------------------------------------------------------------------------
