1. Cook the pasta in a large pan of boiling, salted water. 2. Meanwhile, heat the oil in a frying pan and cook the onion for 3-4 minutes until beginning to soften. 3. Cut the smoked ham into strips about 5mm wide and 3 cm long. Add to the pan and cook for 1 minute then add the peas and liquid and simmer for 4-5 minutes until the liquid has evaporated. Season to taste with a little salt and plenty black pepper. 4. Drain the pasta and return to the pan. Add the pea mixture and the mint and toss together.
