1. Leave the peelings on the potatoes and dice into 1/2-inch cubes. 2. Melt the butter and add the oil in a large no-stick skillet over medium-high heat. When the butter/oil is hot, add in the diced potatoes and chopped onion. 3. Fry until at least 1/2 of the sides have browned -- stirring and turning should be kept to an absolute minimum. 4.
