1. Add oil and margarine; melt. 2. Add flour and cook a little to lose raw taste (will be clumpy at this time). 3. With a whisk, stir in milk and whisk out lumps (looks like they won't come out but they will). 4. Cook over medium heat until bubbly. 5. Grate Monterey Jack. 6. Remove the roux from heat and stir in Jack cheese. 7. Add other cheeses and spices. 8. Stir well. 9. If cheese doesn't melt, place pan over very low heat and stir. 10.
