1. In a food processor, combine dressing ingredients and whiz until blended. 2. In a saucepan, combine rice with 1 cup water. 3. Bring to a boil. 4. Reduce heat and simmer until tender (30-40 minutes). 5. Cool. 6. In a bowl, combine vegetables, rice and cheese. 7. Toss with dressing. 8.
