Pesto Coated Chicken Skewers


1. Thread chicken onto skewers.

2. Place in a ceramic dish.

3. Combine pesto and 1 1/2 tablespoons oil.

4. Spoon over chicken. Turn to coat.

5. Refrigerate for 30 minutes, if time permits.

6. Preheat barbecue plate on medium heat.

7. Place a piece of baking paper on barbecue plate.

8. Barbecue skewers on paper for 4 minutes each side or until chicken is just cooked through.
