1. Place a third of the bread cubes in a greased 13 x 9 inches baking dish. Layer with a third of the pepper/onion blend, roast beef, and cheese. Repeat layers twice. 2. In a large bowl, whisk the eggs, milk, mustard, salt and pepper, pour over the top. 3. Cover and refrigerate for 8 hours or overnight. 4. Remove from refrigerator 30 minutes before baking. 5. Bake, covered at 325 for 1 hour. 6. Uncover and bake 15-20 minutes longer or until a knife inserted in the middle comes out clean. let stand for 10 minutes before serving. ---------------------------------------------------------------------------
