1. Cut pork into cubes. 2. dredge in flour and shake off excess. 3. Heat shortening over med-high heat. 4. brown pork and drain off 5. Bring tomato sauce, tomatoes, green chilis, water, onion, chili powder, cajun seasoning and cumin to a boil. 6. Add pork. 7. Add tomato paste to thicken. 8. simmer over low heat 1-2 hours stirring occasionally. 9. add more seasoning to taste. 10. serve over rice or burritos or "sanchos". ---------------------------------------------------------------------------
