1. Preheat oven to 350°F. 2. Remove 1 tablespoon of rolled oats and set aside. 3. Combine potatoes, flour, remaining oats, and salt in a mixing bowl. 4. Mix by hand until a soft dough forms. 5. Mix in butter. 6. Scatter reserved oats over a dry work surface. 7. Roll dough out as thinly as possible--no more than 1/4". 8. Cut out with lightly floured cutter, or slice into squares. 9. Transfer to a parchment-lined baking sheet. 10. Bake until crisp and lightly browned, about 20 minutes. If browning too quickly, cover with a sheet of foil or parchment paper. 11.
