Prawn Gyros With Mango Marmalade &Amp; Ginger Tzatziki


1. Prawns: Peel the prawns and remove the heads, putting half the heads to one side.

2. In a deep frying pan, make a marinade of the shallot, garlic, lemon juice, wine, paprika, cumin, olive oil, salt and pepper.

3. Let the prawns marinate for about one hour.

4. Then add the heads and simmer for 4-5 minutes.

5. Remove from the hob and remove the heads.

6. Remove the prawns from the sauce, chop into small pieces, arrange on a plate and pour the sauce over them.

7. Marmalade: Boil a cup of water in a saucepan with the sugar for 5-6 minutes to make a thick syrup.

8. Add the spices and remove from heat.

9. Add the mango and lemon juice and stir. The mixture should be the texture of marmalade.

10. Tzatziki:Wash and peel the cucumber, grate and strain.

11. Put the yogurt in a bowl, add salt, ginger and cucumber and mix well.

12. Serve the prawns, marmalade and tzatziki separately on the plate.
