1. Put the sieved maida in a bowl. 2. Add salt and pepper. 3. Mix well. 4. Roll chicken breasts in this and keep aside. 5. Prepare a puree of the peaches in your blender and keep aside. 6. Heat 3 cups of water in a large vessel or a pot. 7. Add parsley and drain after half a minute. 8. Refresh under cold running water. 9. Drain and then make a smooth paste of this in your blender. 10. Keep aside. 11. Heat oil in a pan. 12. Shallow fry the chicken breasts in it on both sides,until they are brown on either side. 13. Heat butter in a separate pan. 14. Add the peach puree. 15. Cook on medium heat for 5 minutes or until it thickens. 16. Keep aside. 17. Preheat oven to 200C. 18. Grease a baking tray with oil. 19. Arrange the fried chicken breasts on it. 20. Spread the parsley paste thickly over the breasts. 21. Drizzle with a tbsp. 22. of olive oil or Canola oil. 23. Sprinkle breadcrumbs, salt, pepper and 1 more tbsp. 24. of olive oil. 25. Bake for 10 minutes at 200C. 26. Pour the remaining olive oil in the pan in which you had fried the chicken. 27. Stir-fry the garlic for 3 minutes till golden brown. 28. Saute the bell pepper in this for 3 minutes on medium flame. 29. Season with salt and pepper. 30. Arrange the chicken breasts on a serving platter. 31. Pour peach sauce on one side and arrange the bell pepper on the other! 32. Serve hot garnished with a sprig of fresh parsley. 33.
