1. Heat oil over medium-high heat, add onions & salt. Cook until starting to brown (15-18 minutes). 2. Add garlic, herbes de provence, salt and pepper. Cook for 1 minute. Add tomatoes, green beans and potatoes. 3. Cover and bring to a simmer.
