1. Grate the rind of the lemon. 2. Add the lemon rind, sugar and butter to the milk and bring to the boil. 3. Pour over the breadcrumbs and leave to stand for 15 minutes. 4. Separate the egg whites and yolks. 5. Stir the yolks into the cool bread mixture. Melt the jam. 6. Pour half of the pudding mixture into a greased ovenproof dish. 7. Spread with half the jam. 8. Add the remainder of the pudding mixture and then the rest of the jam. 9.
