Quark-Keilchen (German Fried Cheese Cakes)


1. Mix together cottage cheese, potato flakes, eggs, salt, sugar, lemon rind, raisins and flour to form a smooth dough, adding a little more flour if dough is too sticky. Pat the dough out on a floured surface to form a rectangle 9x3 inches.

2. Cut into 1 1/2-inch squares.

3. Melt margarine in frying pan over medium heat.

4. Fry squares on both sides until browned, about 1 to 2 minutes on each side.

5. Serve hot with confectioners' sugar, syrup or preserves.
