Queso Panela Con Orégano (Panela Cheese With Oregano)


1. Place cheese in an earthenware or ovenproof dish. Pierce the outside of the cheese with a fork.

2. In a small bowl, combine the garlic, olive oil, corn oil and oregano until they are thoroughly blended. Pour over the cheese. Refigerate, covered, for at least 4 hours, preferably overnight. During this time, baste the cheese with the oil 3 or 4 times.

3. Preheat the oven to 350°F (180°C). Bake the cheese for 15 minutes or until slightly soft. Serve warm with crackers or sliced bolillos (hard bread rolls).
