Quick Chicken Fried Rice


1. Chop the Beans , Onion and Sprigs of Coriander.

2. Break apart the leftover chicken pieces.

3. Heat 1 tablespoon butter in a heavy based pan.

4. Add the beans and onion.

5. Saute for 2 mins and set aside.

6. Add the remaining butter and the leftover rice and saute

7. Add the salt and pepper while stirring.

8. Break 2 eggs and scramble in the same pan and mix with the rice, while sautéing.

9. add the shredded chicken and the veggies to the rice and stir for 2 minutes.

10. Take off the heat and add the coriander sprigs for decoration.

11. Serve hot.
