1. Dice the onion small to fine. 2. In a large skillet or cast iron skillet. Sweat the onion with 1 tablespoon of oil on med heat for 4-5 minutes. 3. Add the garlic and sweat for 1 minute. 4. Add the pork sausage, increase the heat to med/high and cook until done. While cooking use the back of spoon to crumble the sausage into small bits. 5. Decrease the heat to med/low and add the spices (paprika, salt, pepper, garlic, onion, chili, and cumin powders). Stir until well incorporated. cook for an additional 1-2 minutes. 6. Add the red wine vinegar and stir well. Cook for another 2-3 minutes. ---------------------------------------------------------------------------
