1. Put all ingredients except oil in bowl. 2. Let mixture sit while you warm the pan to medium high. You don't want the oil to smoke. 3. Put oil in pan and heat. 4. Drop batter mixture (it should be quite thick and chunky) by teaspoonfuls in to the pan. 5. Flatten each fritter slightly with a fork. 6. Fry each side until golden brown. 7. Blot excess oil on paper towel. 8. Serve 9. Note: These re-heat really well. ---------------------------------------------------------------------------
