Ranch Beef Skillet Supper


1. Brown beef and onion in a large skillet til beef no longer pink.

2. Drain off excess grease. (I use a paper towel and run it across the bottom of the pan, soaking up the grease.

3. Stir in rice and beans, tomatoes, corn and 2-1/2 cups water.

4. Bring to a boil, reduce heat, cover and simmer for 20 minutes or until water has been absorbed.

5. Meanwhile chop cilantro.

6. Sprinkle with cheddar cheese and cilantro.

7. Enjoy!
