Raspberry Fool


1. Set aside 8 raspberries.

2. Crush the rest with a fork, leaving them a little lumpy.

3. Stir in lemon juice and sugar.

4. Pour double cream into another bowl and beat it with a whisk until it has thickened.

5. Fold in the fromage frais and cream gently into the raspberries.

6. Spoon the fool into 4 ramekins.
