1. Heat oil in a large skillet over medium high heat. Sautee chicken, onion and garlic until onion softens and chicken begins to brown crisp on edges, about 8-12 minutes. Salt and pepper to taste. 2. Reduce heat to medium. Stir in tomatoes, chiles and cumin. If needed add enough water just to make the mixture a little soupy. Continue to cook, stirring occassionally, until liquid is reduced. Mixture should be moist, not wet or dry. 3. Use immediately or freeze for later. ---------------------------------------------------------------------------
